Essential Ingredients
- 2 cups 480 ml kefir
- 2 ½ cups 315 g all-purpose flour
- 1 ½ cups 300 g granulated sugar
- 2 large eggs
- ½ cup 120 ml unsalted butter, melted or vegetable oil
- 2 teaspoons vanilla extract
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
Optional Additions
- 1 cup 150 g fresh or dried fruits
- ½ cup 60 g chopped nuts
- 1 teaspoon ground cinnamon

In a medium-sized bowl, sift together 2 ½ cups of all-purpose flour, 2 teaspoons of baking powder, ½ teaspoon of baking soda, and ½ teaspoon of salt. Set the dry ingredients aside.

In a large mixing bowl, whisk together 2 cups of kefir, 1 ½ cups of granulated sugar, 2 large eggs, ½ cup of melted unsalted butter (or oil), and 2 teaspoons of vanilla extract. Make sure the mixture is smooth and well combined. If adding any spices (like cinnamon) or zest, fold them in at this stage.

Gradually add the sifted dry ingredients into the wet ingredients, mixing gently. Stir until the batter is just combined, being careful not to overmix. Overmixing can lead to a dense cake, so mix until the flour is incorporated, and there are no large pockets of flour remaining.

Place the pan in the preheated oven and bake for 25-30 minutes. Start checking at 25 minutes by inserting a toothpick into the center of the cake. If it comes out clean or with a few crumbs, the cake is done. If the toothpick comes out with wet batter, continue baking for a few more minutes.
