  • 2 cups 480 ml kefir
  • 2 ½ cups 315 g all-purpose flour
  • 1 ½ cups 300 g granulated sugar
  • 2 large eggs
  • ½ cup 120 ml unsalted butter, melted or vegetable oil
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Optional Additions

  • 1 cup 150 g fresh or dried fruits
  • ½ cup 60 g chopped nuts
  • 1 teaspoon ground cinnamon

Instructions
 

Step 1

  • Begin by preheating your oven to 350°F (175°C). Grease a 9x13-inch baking sheet or line it with parchment paper for easy removal.

Step 2

  • In a medium-sized bowl, sift together 2 ½ cups of all-purpose flour, 2 teaspoons of baking powder, ½ teaspoon of baking soda, and ½ teaspoon of salt. Set the dry ingredients aside.

Step 3

  • In a large mixing bowl, whisk together 2 cups of kefir, 1 ½ cups of granulated sugar, 2 large eggs, ½ cup of melted unsalted butter (or oil), and 2 teaspoons of vanilla extract. Make sure the mixture is smooth and well combined. If adding any spices (like cinnamon) or zest, fold them in at this stage.

Step 4

  • Gradually add the sifted dry ingredients into the wet ingredients, mixing gently. Stir until the batter is just combined, being careful not to overmix. Overmixing can lead to a dense cake, so mix until the flour is incorporated, and there are no large pockets of flour remaining.

Step 5 (optional)

  • If you're adding fruits or nuts, fold them into the batter now, ensuring even distribution. Lightly flour fresh fruit to prevent them from sinking to the bottom of the cake during baking.

Step 6

  • Pour the batter into the prepared 9x13-inch baking pan. Use a spatula to spread the batter evenly and smooth the top. Tap the pan lightly on the counter to remove any air bubbles.

Step 7

  • Place the pan in the preheated oven and bake for 25-30 minutes. Start checking at 25 minutes by inserting a toothpick into the center of the cake. If it comes out clean or with a few crumbs, the cake is done. If the toothpick comes out with wet batter, continue baking for a few more minutes.

Step 8

  • Remove the cake from the oven and allow it to cool in the pan for 10-15 minutes. Once it’s slightly cooled, carefully transfer the cake to a wire rack to cool completely. This helps the cake retain its moisture and prevents it from becoming soggy.

Step 9

  • Once the cake is completely cool, cut it into squares or rectangles. You can serve it plain, dust it with powdered sugar, or top it with a glaze, whipped cream, or your favorite frosting.
