Step 1: Prepare the Ingredients

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats. Sift together the all-purpose flour, cocoa powder, baking powder, and salt in a medium bowl.

Step 2: Make the Batter

  • In a large mixing bowl, cream the softened butter and sugar together until light and fluffy using a hand or stand mixer. Add the egg whites and vanilla extract, mixing until fully incorporated. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until you achieve a smooth, spreadable batter.

Step 3: Spread and Shape the Cookies

  • Drop small spoonfuls of batter onto the prepared baking sheets, leaving about 2 inches between each. Use the back of a spoon or an offset spatula to spread the batter into thin, even circles (around 3 inches in diameter).

Step 4: Bake the Cookies

  • Place the baking sheets in the preheated oven and bake for 8–10 minutes, or until the edges are firm and slightly darkened. Remove from the oven and allow the cookies to cool on the baking sheets for 2–3 minutes. Carefully transfer the cookies to a cooling rack to cool completely.
