Step 1: Prepping the Ingredients and Equipment

  • Preheat your oven to 350°F (175°C)
  • Grease your sheet pan or line it with parchment paper
  • Measure out all ingredients to ensure smooth preparation

Step 2: Mixing the Batter

  • In a large mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt
  • In a separate bowl, combine the wet ingredients: kefir, eggs, melted butter, and vanilla extract. Mix until smooth
  • Gradually add the wet ingredients to the dry mixture, stirring gently until just combined. Avoid overmixing to maintain a light texture.

Step 3: Baking the Cake

  • Pour the batter evenly into the prepared sheet pan
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean
  • Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely
