For the Cake Batter
- 315 g all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp salt
- 230 g unsalted butter softened
- 400 g granulated sugar
- 4 large eggs at room temperature
- 1 tbsp pure vanilla extract
- 240 ml whole milk at room temperature
- Pink or blue gel food coloring for the reveal
For the Buttercream Frosting
- 345 g unsalted butter softened
- 750 g powdered sugar sifted
- 45–60 ml heavy cream
- 1 tbsp pure vanilla extract
- A pinch of salt
- Additional gel food coloring optional, for exterior design
For the Surprise Filling (optional)
- 200 g colored sprinkles or candies in pink or blue
Step 1: Prepare the Cake Batter
Preheat your oven to 350°F (175°C). Grease and line the cake pans with parchment paper.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, beat the butter and sugar together on medium speed until fluffy, about 2–3 minutes. Add the eggs one at a time, then mix in the vanilla extract.
Gradually add the dry ingredients to the wet mixture, alternating with milk. Begin and end with the dry ingredients.
Step 2: Add the Surprise Color
Divide the batter into two bowls. Add pink or blue gel food coloring to one portion for the gender reveal layer. Mix until the color is uniform.
Pour the batter into the prepared pans (one plain and one colored) and smooth the tops with a spatula.
Step 3: Bake the Cakes
Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
Let the cakes cool in the pans for 10 minutes, then transfer them to a cooling rack to cool completely.
Step 4: Prepare the Frosting
Beat the butter on high speed until creamy, about 2 minutes. Add the powdered sugar gradually, followed by the vanilla extract, heavy cream, and a pinch of salt. Beat until the frosting is smooth and spreadable.
Step 5: Assemble the Cake
Level the cakes with a serrated knife if needed. Place the plain cake layer on the bottom. If using a surprise filling, cut a small circle in the center of the colored layer, fill the cavity with sprinkles or candies, and cover it with the cut-out piece.
Stack the colored cake layer on top, ensuring the filling is sealed.
